It is primarily Alessandro Baccichetto — assisted by his brother Paolo — who runs the cellar, where vinification is carried out using the Ganimede® method: a gentle, versatile grape processing system that ensures naturalness, maximum efficiency, and an exceptionally high level of quality in the finished wine.

THE GANIMEDE® METHOD AND ITS ADVANTAGES

Among the key benefits of the Ganimede® method are the selective extraction of desirable compounds — primarily fine tannins — during pump-overs, and a significant reduction of volatile acidity in the finished wine. The method is applied both to red wine production and to highly aromatic whites, such as Sauvignon Blanc and Gewurztraminer (Traminer Aromatico), as it encourages the full expression of varietal aromas.
